So this is really a question concerning the layers. Here is a scenario:
If you put a Crusher Zendikon on a Creeping Tar Pit and activate the Tar Pit, how big is the Tar PIt and what is its abilities?
My guess: its a 3/2 unblockable trampler.

as far as i understand, it'll be a 3/2 unblockable trampler, like you said. First off, it doesn't take off previous abilities, so activating the tar pit won't take away the trample. then time stamps are applied to the power/toughness of the creature/land. Since the activation is the newest time stamp, it'll be a 3/2 until end of turn.

If a land is enchanted by a Zendikon, then that land's animation ability is activated, the activated ability determines the land's color, power, and toughness. The land has all creature types and all abilities granted to it by the Zendikon and by the activated ability.
So in this instance, Creeping Tar Pit would be Land that is a 3/2 black Beast Elemental creature with Trample and is unblockable.
The specific Rule you are looking for is 613.3b Layer 7b:Effects that set power and/or toughness to a specific number or value are applied.
